4 large ripe bananas
1 1/2 cups flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/3 cup sugar
a pinch of cinnamon
a pinch of nutmeg
a pinch of salt
1/4 cup unsweetened applesauce
1/4 cup chopped walnuts
Preheat oven to 350.
Mash bananas in a mixing bowl.
In a separate bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg and salt.
Add sugar and applesauce to banana mixture.
Add flour mixture to banana mixture and stir until everything is mixed in.
Pour mixture into bread loaf pan.
Bake for 30-50 minutes depending on loaf size. Check with a toothpick for readiness.
Once loaf is out of oven and cooled, add icing and walnuts to top if desired.
